An all-gas range burns gas on top and gas underneath. That sounds like a small difference from a dual fuel machine and it is not: the oven is a completely different appliance. There is no bake element to test, no relay switching 240 volts, and the fault list barely overlaps. If you have owned both, you already know they bake differently too.
The igniter is the part that fails
In a gas oven, the igniter does two jobs. It glows hot enough to light the gas, and — in the common hot-surface design — it is also the current-sensing device in the safety circuit. Gas only reaches the burner when enough current is flowing through the igniter, which is the appliance proving to itself that there is something hot enough down there to light what it is about to release.
Igniters weaken with age rather than dying outright. As the element ages it draws less current, and there is a window — often months long — where it still glows visibly but no longer draws enough to open the valve. That produces the single most misdiagnosed complaint in the category: “the igniter glows, so it must be the valve.” It usually is not. A glowing igniter drawing below spec is still a failed igniter, and it is measurable in about two minutes with a clamp meter.
The symptom owners describe is a slow light. Three minutes, then four, then one evening it glows and nothing happens. If your oven has started taking longer to light, book before it stops entirely — the part is the same either way, but you get to choose when the kitchen is out of action.
Uneven baking
Gas ovens bake with a moving column of hot air and a fair amount of moisture, because burning gas produces water vapour. Uneven browning front to back is normal in small amounts and abnormal when it gets worse.
The causes worth checking, in order: a burner baffle or flame spreader that has been reinstalled wrong after a cleaning, a partially blocked burner port producing an asymmetric flame, a convection fan that has slowed, and a door that no longer seals along the top. Any one of those shifts where the heat goes. Two of them together turn a cake into a wedge.
Yellow flames and soot
A gas flame in good adjustment is blue with a distinct inner cone. Yellow through the body of the flame means insufficient primary air, and it will leave carbon on the underside of your pans. Air shutters drift, and in a kitchen with heavy use they close up with grease film.
There is one specific cause worth naming for older Jacksonville houses: a range converted between natural gas and propane at some point in its life, with the orifices swapped but the shutters never readjusted. We see this on ranges that have moved house with their owners. It is a straightforward correction and it is worth doing properly, because a chronically rich flame produces carbon monoxide as well as soot.
Simmer, and why it goes
The low end of a gas burner is where quality shows and where age shows first. A simmer that will no longer hold a gentle flame is usually a valve low-fire setting or a partly obstructed simmer port. Owners compensate with a diffuser for a year or two before they mention it. It is adjustable, not terminal.
Old kitchens, new ranges
Riverside, Avondale, Old Ortega and San Marco have kitchens laid out in the 1900s to 1930s, and a 48-inch range going into one of them is a construction job before it is an appliance job. Undersized cabinet openings, gas lines sized for something much smaller, and no dedicated 20-amp circuit for the range’s electronics — an all-gas range still needs power for its ignition and controls. We look at that supply before we look at anything else in those neighbourhoods, because an ignition system on a shared, loaded circuit misbehaves in ways that look exactly like a failing part.
